Traveling and Food for the win!

Hello!

What a fun week we had in our household! We spent the week in beautiful Colorado with the family.

​

Three out of four kids skied and the rest of us relaxed and enjoyed the mountains. We were fortunate in that we got over two feet of snow on the first day of skiing. The kids were over the moon about the fresh powder.

Colorado is so different from being in Chicago. When it's cold in Chicago it's COLD. When it's cold in Colorado it still feels warm due to the elevation and the amount of sun that shines. We sometimes go without coats in 35-degree temps!

We ate at some terrific restaurants and the highlight of our foodie adventure was going up the mountain to Zach's cabin. We rode a snowcat up and down the mountain to get to the cabin. Dinner was delicious but the highlight for the kids was the cheese fondue appetizer.

The other dinner that stood out was La Nonna. The four kids shared 5 pastas plus two appetizers. They were in heaven with the hand-made noodles. Of course, I could have had zoodles with the same sauces to stay GF, but Benji and I shared a few delicious appetizers for dinner that night.

This coming week I will be attending a Food Blogging Conference. I'm lucky that it will be in my hometown of Chicago and it's tied to the International Housewares Show, which I will attend.

​Baked Lemon Chicken Thighs​

This recipe is a staple in our house. I use the marinade for just about any type of chicken you can imagine. Feel free to marinade the chicken a day ahead and bake when you need it!

​Easy GF Blintz (egg casserole)​

This is one of those casseroles that you make for family or company. It's a standard recipe that does not have pre-made blintzes as the base. It can be easily made GF is delicious the next day as well!
